Sea Bass with Red&Yellow Pepper Compote

1 pc of Sea Bass
Thyme (leaves removed from stems)
Olive Oil
Salt
Pepper
Butter
How to:
1) Season sea bass with a little salt and the fresh thyme leaves.
3) Flip over to fry the other side, for approximately 30 seconds as well.
5) Add some cooking wine to the pan and cover it up, simmer for about 1 minutes.
7) You can serve the sea bass on a bed of rice or with pepper sauce.
Ingredients for the sauce:
1 Cored And Finely Sliced Red Peppers
1 Cored And Finely Sliced Yellow Peppers
2 Star Anise
2 sprigs Basil
1 tablespoon White Wine Vinegar
200ml Water
How to:
1) Roughly slice the peppers and sweat in a pan of hot olive oil until softened.
2) Season , then add the star anise, basil and vinegar.
3) Pour the vinegar in around the side of the pan so that it gently heats up before reaching the centre.
5) Keep over the heat and allow the mixture to reduce.
6) The vegetables should look rich and glossy.
7) Add the water and leave to reduce again, approx 15 minutes.
8) The water should have reduced enough to make a syrupy sauce.
9) Remove the star anise and basil stalks and transfer to a blender.
10) Blitz until smooth.
11) Taste and season if necessary, blitz again.
12) The consistency should be that of a smooth, thick soup.

Salmon Chowder

Ingredients:3 tablespoons butter 3/4 cup green beans 1 teaspoon garlic powder 2 cups cubed potatoes 2 cups chicken broth 1 teaspoon salt 1 teaspoon ground black pepper 16 ounce fresh salmon 1 cup of milk 1/4 pound Cheddar cheese, shredded a splash of white wineDIRECTIONS
- Melt butter in a large pot over medium heat. Saute cubed potato and garlic powder until tender. Stir in broth, salt and pepper. Bring to a boil, and reduce heat. Cover, and simmer 20 minutes.
- Stir in salmon, milk, bean, and cheese. Add a little bit white wine for fine taste.Cook until heated through.
